Southern Supper

Tonight I hosted a mini get together of the High Rock Supper Club at my house. My dad's best friend Tommy & his wife Heather (my god-parents) attended and my nanny Mallory (who comes every week night) brought her boy friend Brian. Tommy and Heather usually host the High Rock Supper Club (which consists of about 15 non-formal members) so they were grateful that I ordered to cook a good ole southern meal! Meatloaf is one of my favorite dishes that I cook, and it proved to be a crowd favorite. In case you are curious on how to make your own meatloaf like I do, you'll find the recipe below! Good luck!


I am updating this recipe by adding photos to go along with each step!! 







caution: photos show raw hamburger.
oh, & be prepared to get your hands messy!

Mamaw's Meatloaf




Ingredients:
1 lb of hamburger (deer hamburger) 
1 egg, beat
tomato paste
tomato sauce
3/4 sleeve of saltin crackers, crushed
tad of oatmeal
1onion (original calls for a whole onion, not a huge fan though so I use 1/2)
1 green bell pepper (original calls for a whole bell pepper, not a huge fan though so I left out)
1 cup oz of shredded cheddar cheese





Directions
preheat oven to 350 degrees
combine pound of thawed hamburger, cup of cheese, beat egg, chopped onion, and smashed crackers in a large bowl. then add about a cup of tomato sauce, whole little can of tomato paste, and a dash of oatmeal into the bowl. 



my dad bought an average size can of tomato sauce, versus the smaller ones that i get for this recipe. so i poured that^ much into a small container, then the rest(below) into the large bowl.

"tad" or oatmeal... no specific measurement.


mush mush mush!

form a cup with your hand, and go along the bottom of the pan, making sure no ingredients are left out of the mixture.




then put into greased pan, approx. 9x13. (i use Pam cooking spray) and form into a "loaf" with your hands.




bake for 45minutes at 350 degrees F.

remove form oven and squirt gracious ammount of ketchup across surface. 

place back in oven for 10-15 minutes. let cool atleast 10 minutes before serving.

What's New

My white iPhone 4, that's what's new! I know you're thinking, "Wait, she had a iPhone already..." Yes, you are right. But that poor little fella tumbled in to the toilet at a surprise party for my "god-mother" Heather. Although it was in my defender otterbox, it bit the dust. I was super bummed at the thought of having to buy a new iPhone, and loosing all my data, media, settings, etc. We had an upgrade on the business account, making my new iPhone only $49.99! YAY! But my new found 'high' crashed, fast. After hooking up to my iTunes account, I found my phone holding all my dad's contacts, not mine. Oh no! Oh, yes. So after being a sourpuss, for lack of a better adjective, all day, I came home from the boy friends and started pressing buttons. Then suddenly, my phone "restored" and all my media, contacts, data was back! Wow, I was so thrilled! I am having other family related technical difficulties with the iTunes accounts, so I am just praying certain ones "grow up" so we can sort all this phone mess out, soon!


Also, I got a Beach-Wave perm last Tuesday along with a shorter hair cut! It is super cute and fun! I am hoping to take some new pictures soon, so when it happens I will surely post some here on the blog!

i got my beach wave perm and a shorter hair cut tuesday afternoon! i loooove it! it goes from curly, to wavy, straight so easily! best of three worlds! pictures soon!

ashton got a new horse wednesday afternoon! we decided to name her Allora! she is a great addition to ashton's horsey family (Drifter & Mackie) pictured behind.

i started back hard-core dieting. my routine is based off of the south beach diet. no sugar or bread for two weeks. meaning? salads, salads, and more salads. what i would give for a huge bowl of ice cream right now. but i love the feeling that comes with working out- so accomplished!

[five]
today, Ashton, her mom Kim, and I are traveling to South Park Mall, in Charlotte, NC! I am super excited to shop til I drop! I am in search of pretty accessories to match with otherwise boring outfits! Wish me luck & if you have any suggestions to wear I could find good jewelry, comment to let me know!

Chicken Enchilada Soup

This recipe is one I discovered and new right away that I was going to try it! So last night, I gave it a whirl! The recipe comes from my sponsor Sharee's blog, momFITingitallin! Her family adored it, so I hope mine does too! 




Ingredients:
2 - chicken breasts
1 - Can of cream of chicken soup (you can use anytime of cream soup)
1.5 cups - of enchilada sauce
1 cup - green bell peppers
1 cup - red bell peppers
1 cup - cheese - I used shredded sharp cheddar cheese 
1.5 cups - chicken broth



Directions:
1) Boil the chicken for 4.5 hours in the crock put during the day with chicken broth, lemon juice and Ms. Dash
2) Cut/ shred the chicken up and place back in crock pot then..
3) Put all of the ingredients into the crock pot for about 1 hour 

I thought ummm what can I put the soup over: rice, couscous - - no wait Hint of Lime chips (I believe this made it).

Now to make this healthier - I used 98% fat free cream soup, I used the low fat 2% cheese and for the chips we measured them out per the serving size. 










If the last photo doesn't make my love of this soup obvious, I'll tell you that I LOVED this!! So, so, soooo yummy! Hope you give it a try and it pleases your family!
