Ingredients:
2 - chicken breasts
1 - Can of cream of chicken soup (you can use anytime of cream soup)
1.5 cups - of enchilada sauce
1 cup - green bell peppers
1 cup - red bell peppers
1 cup - cheese - I used shredded sharp cheddar cheese
1.5 cups - chicken broth
Directions:
1) Boil the chicken for 4.5 hours in the crock put during the day with chicken broth, lemon juice and Ms. Dash
2) Cut/ shred the chicken up and place back in crock pot then..
3) Put all of the ingredients into the crock pot for about 1 hour
I thought ummm what can I put the soup over: rice, couscous - - no wait
Hint of Lime chips (I believe this made it).
Now to make this healthier - I used 98% fat free cream soup, I used the low
fat 2% cheese and for the chips we measured them out per the serving size.
If the last photo doesn't make my love of this soup obvious, I'll tell you that I LOVED this!! So, so, soooo yummy! Hope you give it a try and it pleases your family!

I'm seriously going to make this recipe for tonight's dinner. Only minus the bell peppers because I'm not fond of them and since I have an avocado on hand I'll ad that as the topping. It looks like it'll be delicious!
